A sablé cookie made with flour and almond flour originates from Sablé-sur-Sarthe in the Normandy region of France, dating back to the 17th century. The term sablé means "sand". I included Brazil because the recipe originated from a person of that region.
Sable's are delicate and flavorful with the addition of premium European butter, egg, all-purpose flour, pure vanilla bean and fine milled blanched almond flour. Eat them plain, dusted with sugar or as a double cookie filled with a favorite preserve or chocolate hazelnut filling.
-The preserve filled selection is a scalloped round cookie with center cut-out opening revealing the preserve used. (See image) The preserve flavors currently are Apricot or Blackberry.
